Simple Prawn Curry

Ingredients
raw king prawns (200g)
2 tbsp olive oil
1 onion
1 garlic clove
1 medium bell pepper
thumb-size ginger or a teaspoon dry ginger
1 can of chopped tomatoes
1 tsp turmeric
1 tsp cumin
2 tsp coriander
Directions
Finely chop onion, pepper, and garlic clove.
Heat a large wide-based pan with 2 tbsp olive oil. Add the chopped onion and cook for a couple of minutes until it gets softer.
Add the chopped pepper and garlic and cook for a couple of more minutes until the peppers get softened and add the ginger.
After the onion and pepper are soft enough, add the chopped tomatoes followed by 150ml water.
Continue until the tomatoes break down and become saucy.
Stir in the prawns, turmeric, and cumin, let it cook for 5 minutes.
Season well and lastly add fresh or dry coriander.

You can serve this delicious dish with fragrant jasmine rice and warm naan bread.
