Herb crusted halibut - serene! Luminous flakes of succulence served on a pea puree with asparagus and tomatoes warmed in a coriander vinaigrette surrounded by carrots roasted with honey and buttered new potatoes. Fabulous fish, as always, the Corrigan clan.

So fresh n delicious as before! My wife cooked simply in oven after initial pan fry only for few minutes. Served with roasted assorted vegetables and small portion of mash potato.
